[it's] that "never really spent time doing anything you weren't already kind of good at or that didn't come fairly easy" thing that we perfectionists get really good at doing because we can't stand not being good at something.

Oo. I know this one firsthand. I'm saving it here because it's naming something I've had my whole life. I avoid trying because I might not be good at it, because I can't stand not being good at something... but by not trying I never get the started-out-bad-and-got-better effects, unless I'm pushed into it by other factors.
